Blueberry Dessert Pizza
Arabic bread:
- 2 cups shredded mozzarella cheese (low-moisture)
- 2 tbsp cream cheese, low fat
- 2 eggs, beaten
- ¾ cup almond flour
- ½ tsp baking powder
Blueberry Compote:
- 1 cup blueberries, fresh or frozen
- juice from ½ lemon
- 1 tsp zero calorie sweetener
Ricotta Cream:
Method
- Preheat oven to 350 F and prepare a large baking sheet with parchment paper.
- In a microwave safe bowl, melt the mozzarella cheese and cream cheese together for 30 seconds and mix well.
- Mix eggs, almond flour and baking powder. Leave the mixture like this for 5 minutes so that the flour absorbs some of the moisture.
- Make a ball of the dough and place it on a baking sheet and press it flat.
- If the dough is too sticky then you can wet your hands.
- Meanwhile, cook the compote by placing the ingredients in a small saucepan over medium heat.
- Cook until blueberries burst, about 4-5 minutes.
- Using the back of a wooden spoon, lightly mash the blueberry halves.
- Remove from heat and let cool.
- Bake crust for 14-18 minutes and until golden. let cool.
- In the bowl of a stand alone mixer, beat together cream cheese and sweetener.
- Mix in heavy cream, protein, vanilla and zest. Add ricotta and mix.
- Assemble by spreading ricotta cream over crust, top with blueberry compote and QuestBlueberry Bar pieces.
- Cut into 12 slices and serve.
